All kids seem to love pasta and a good bolognese sauce is a great way of getting vegetables into their diet. My eldest has decided that he does’nt like vegetables any more but funnily enough he devours his spaghetti bolognese with lots of them disguised in delicious tomato sauce , so success !!
Traditionally you would just put celery , carrot and onion in a bolognese sauce, I add mushroom , courgette, red pepper or green beans to mine . What ever you have in your fridge really . Squash is also lovely and breaks down more when cooked so well disguised . The trick is a well flavored sauce using tomato passata and to cook it slowly for about 1 hr .
I also use this sauce as a base for a pie too , toppped with creamy mashed potato , delicious !
Bolognese sauce .
350g Minced beef.
1 tblsp extra virgin olive oil .
2 cloves garlic, grated.
1 small onion , diced.
I carrot, diced.
2 sticks celery , diced.
Few chestnut mushrooms, chopped.
1/2 courgette, diced.
1/2 red pepper, diced.
Few green beans , chopped.
1 tin chopped tomatoes.
4/6 tblsp passata.
75ml stock or water.
Sprig fresh basil .
Sea salt, ground black pepper.
Heat olive oil in a saucepan , add onions and garlic . Cook for about 1 min , then add mince. Sauté until lightly browned, add all the vegetables and the fresh basil, continue to sauté for a few mins. Add chopped tomatoes, passsta and stock , bring to a boil then reduce heat and simmer for about 1 hour to soften and reduce the sauce. Taste for seasoning and remove basil sprig.
Serve with cooked pasta or creamy mashed potato . I find another great way to hide the veggies is a good grating of fresh Parmesan over the sauce before you serve it to little beady eyes !!!
This can be frozen in little containers when fully cooled.
