It’s lovely to make something sweet for the ones you “love” on Valentine’s Day, these gorgeous heart shaped shortbread cookies are delicious and really quick and easy to prepare . Great for getting the kids involved too !!
The dough freezes really well so it can be made ahead and defrosted ready to roll. The cookies store better in an air tight container I always put them in a large Kilner jar , so I can admire them !! Only problem is “ what you see , you want to eat “ it is Valentine’s after all ♥️
Short bread dough .
225g cold butter, cubed.
110g vanilla caster sugar.
225g plain flour.
110g corn flour.
Melted dark chocolate, at least 55% cocoa.
Place all of the ingredients in a food processor and blitz until the dough just comes together , coarse bread crumbs!
Empty dough on to a clean work surface and bring together with your hands . Flatten to a disc shape , wrap in cling film and chill for min 30 mins .
Roll out to the thickness of a 1 e coin, cut out with heart shaped cutter . Place on a lined baking sheet , I like to use scilicone sheets , and bake in pre heated oven until lightly golden .
Cool on a wire rack and then dip cookie in melted dark chocolate!
