Waffles !

As a treat I make my boys American style pancakes , they love them but sometimes it’s nice to change. I’ve seen a lot of press recently on waffles and always dismissed them, as I thought they were difficult to make and very heavy in texture .
Boy , was I wrong they are delicious and very straight forward to make . No yeast , no proving just a bit of whisking and lots of gentle folding .
I bought an electric waffle machine on amazon , not expensive and they have lots to choose from . You can also buy the old style waffle iron you place directly on to your stove.
They went down an absolute treat with the boys and with mum too !! We had crispy bacon on ours but you can serve them with mixed fresh berries or just smothered with melted butter , delicious.

Waffles .

Ingredients .
2 eggs separated.
2 1/2 oz butter, melted .
1 oz vanilla caster sugar.
6 oz plain flour, sifted.
1/2 tsp baking powder, sifted.
7 fl oz milk.

Pre heat your waffle machine .
Separate eggs , place the whites in a clean dry bowl and whisk until stiff peakes. Whisk the yolks and sugar together in another bowl until light and creamy , add flour, baking powder , melted butter and milk. Mix well together to form a batter.

Mix a spoon of the beaten whites into the batter to loosen it , then fold in the rest , gently .
Spoon some of the mixture onto the hot waffle templates, close and cook until risen and golden brown .
