Oh glorious blue sky’s , barbecues and eating al fresco! Just love it. Has to put a big smile on your face. This time of year I love trailing outdoor markets, we have a wonderful one on a Friday locally where I get most of my fruit and vegetables. Spotted these wonderful varieties of tomatoes, perfect for a tomato and onion salad, drizzled with lots of good extra virgin olive oil, red wine vinegar and oregano, heaven! The different shapes and colours of the tomatoes look amazing on a large white plate.
I picked up some delicious Gambas to barbecue in my local fish mongers, Kirwans, wonderful shop. Gambas are better for cooking over charcoal, thinner shell than Langoustines, so cook in a flash. I marinade them in garlic, olive oil, sea salt and lemon zest, place them over white coals and cook on either side for 2 mins, until they turn that gorgeous coral colour.
